Triple Chocolate Oreo Bars

One of my favorite foods are Oreos. Not just any oreos, double stuff! Oh goodness they are good! If I see a recipe that calls for oreos, I instantly want to try it. I found this recipe at http://cookiesandcups.blogspot.com/. It was so good! I took this treat for a ward party and they did not last long! I made another batch the next day because they were that good and so easy to make! My mouth is watering just thinking about them!

Triple Chocolate Oreo Bars
1 16.6 pkg of Oreo cookies
1 stick (1/2 cup) butter, melted
1/4 teaspoon salt
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup mini chocolate chips
1 cup white chocolate chips, melted

Preheat the oven to 325°

Line a 9 x 13 pan with foil (shiny side down) and spray with non-stick spray.


Set aside 8 Oreo cookies.

Crush the remaining Oreos with either your food processor or in a ziplock bag with a rolling pin.

(the ziplock method is what I did, as I loathe the food processor)

When the Oreos are crushed transfer them into a medium bowl and add you salt and melted butter, stirring to combine.
Press your Oreo mixture into your prepared pan.
Chop your remaining 8 Oreos into coarse pieces and set aside.

In a double boiler (a bowl fitted over a pan of boiling water) add your sweetened condensed milk, the semi-sweet chips, the milk chips and the vanilla. Stir until all melty.

(OR you could do this in the microwave, stirring every 30 seconds until melted)


Remove from heat


Pour your melted chocolate mixture over the Oreo crust.

Sprinkle the mini chocolate chips and the Oreo cookies chunks over the top of the filling.

Press down gently into the chocolate topping.

Bake for 20-22 minutes in preheated oven.

Cool pan on a wire rack for approx 1 hour.


Melt the white chocolate chips.

Drizzle the white chocolate over the top of the bars.

Chill in refrigerator until completely cooled, an hour or two.

Make sure they are completely cooled, otherwise they are a bit mushy...still delicious, but hard to cut.


When ready to serve, using the foil remove from the pan and cut into squares.

Eclairs

One of Justin's favorite treats are Eclairs. I was going to buy him some for Valentine's Day, but figured if I made them, it would mean so much more to him! Pretty sure I won best wife ever award for making them and Justin keeps asking when I am going to make more! So delicious and so easy! I do have to say though, I did not know that they would get so big! Mine turned out huge! I made ten huge eclairs. Next time, I will make them much smaller and I will get so many more, probably about 20-40. I got this recipe from cooks.com.





CHOCOLATE ECLAIRS


ECLAIR:

1 c. water
1/2 c. butter
1 c. flour
4 eggs

Bring to rolling boil water and butter. Take off heat. Add flour and stir with spoon until ball can be formed. Add eggs. Beat like crazy. Mix until dough is very stiff; otherwise it will run all over pan. Drop by full teaspoons onto a cookie sheet for individual serving; put in a circular ring or in a strip.
Bake 45-50 minutes at 400°F. Cool out of draft.


FILLING:

2 pkg. instant French vanilla pudding
2-1/2 c. milk
1 (8 oz.) container Cool Whip
1 tsp. vanilla

Mix pudding and milk. Mix well. Fold in Cool Whip and vanilla. Slice eclair in half and fill generously with entire amount of filling. Replace top of eclair. Drizzle top of eclair with Chocolate Sauce.

CHOCOLATE SAUCE:

6 oz. semi-sweet chocolate chips
1-1/3 c. canned (evaporated) milk
1/2 c. butter
2 c. powdered sugar
1 tsp. vanilla extract

Melt chocolate chips and butter together. Gradually add milk and powdered sugar. Bring to boil. Stir continuously. Boil for 8 minutes. Remove from heat and add vanilla extract.
Makes 3/4 quart.

Southern Cream Dessert

This is such a yummy dessert! My mom use to make it all the time growing up and we loved it! I haven't had it forever, so Justin made if for me this last weekend! He is so sweet! If you are a pudding lover or even if your not, you should try this one!

1 cup flour
1 cube butter melted
1/2 cup chopped nuts (I used pecans)

Mix together and press into a 9X13 pan. Bake at 350 degrees for 15 minutes. Cool crust.

8 oz. cream cheese
2 cups Cool Whip
1 cup powdered sugar

Beat together and pour over cooled crust.

1 pkg. small chocolate instant pudding
1 pkg. small vanilla instant pudding
3 cups milk

Mix together like pudding and pour over cream cheese mixture. Top with cool whip and sprinkle with nuts. (We do half nuts, half without to make everyone happy) Chill.

I think next time we make it, we will double the crust because it was pretty thin and didn't cover the whole pan. Also, I think we might do a banana pudding instead of the vanilla to make it a chocolate banana dessert. You can change it up the way you like it!
